Ingredients
- 1 1/2 lbs red snapper
- 1 cup fresh mushrooms, diced
- 1 lemon, squeezed
- 1/2 tsp paprika
- 1/8 tsp cayenne
- 1/2 tsp oregano
- salt and pepper, to taste
Directions
- Pre-heat oven to 400 degrees.
- In a small bowl mix paprika, oregano, cayenne pepper, salt and pepper. Squeeze lemon juice over both sides of fish.
- Rub both sides of fish with herb mixture. Put fish in a non-greased baking dish.
- Cook mushrooms in a medium sized pan in remaining lemon juice over medium heat for about 2 minutes or until hot. Pour mushrooms and lemon juice mixture over fish. Cover and bake 15 to 20 minutes.
