Approximate cooking time: 25 minutes
Serves 4
Ingredients:
- 1 1/2 lbs sole fillets
- 1/2 (cup) Swiss cheese, shredded
- 3 (tablespoon) butter
- 1 (medium) onion, sliced thinly
- 1/2 (pound) fresh mushrooms, sliced
- Pinch (to taste) Salt
- Pinch (to taste) Pepper
- 1/2 (teaspoon) nutmeg
Directions:
- Preheat oven to 400 degrees. Butter a 9″ shallow baking dish.
- Melt butter in skillet. Saute mushrooms and onions over medium heat until tender and translucent; about 5 minutes
- Place fillets in buttered baking dish. Season fish with salt and pepper. Spoon the onion and mushroom mixture over the fillets. Top with shredded Swiss cheese.
- Cover with aluminum foil and bake 20 minutes. Remove foil and place under the broiler to brown the cheese; about 2-3 minutes. Serve immediately.
