Approximate cooking time: 40 – 50 minutes
Ingredients
- 5 eggs, slightly beaten
- 1 large red potato, diced
- 1 1/2 cup cheddar cheese
- 1/2 cup grated parmesan cheese (optional)
- 1 cup spinach, washed and drained
- 1 white onion, diced
- 1 cup milk
- salt and pepper to taste
Directions
- Toss cheddar cheese, spinach, onion, milk, eggs, diced potatoes, parmesan cheese (optional), and pepper; mix well.
- Pour into pie pan.
- Bake at 350* for 50-60 minutes or until set.
