Approximate cooking time: 15 minutes
Serves 4
Ingredients:
- 4 (6 oz) sea bass or striped bass fillets, with skin on
- 1/2 tsp ground coriander
- 1 tbsp honey
- 1 tbsp Dijon mustard
- 1 tbsp olive oil
- salt and pepper, to taste
Directions:
- Combine honey and mustard in a small bowl. Brush the skin of the fillets with the oil and then place them on a plate, skin-side down. Brush honey mixture onto top of each fillet. Sprinkle each fillet with the coriander, salt and cracked peppercorns.
- Preheat the grill to medium, then oil the grill. Place the fillets on the grill, skin-side down. Cover and cook for 5 to 10 minutes or until cooked through. Serve immediately.
