Serves 4
Ingredients:
- 1 cup cooked quinoa, warmed
- 1/2 cup shredded mozzarella or cheddar
- 2 egg whites
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/3 cup chopped fresh spinach leaves
- Add vegetables like sweet pepper, mushrooms, tomatoes, etc.(optional)
- 1 drop DoTerra Basil essential oil or chopped basil (optional)
Directions:
- Preheat oven to 350 degrees and spray a mini muffin tin with cooking spray.
- In a medium bowl, mix warm quinoa with cheese to melt the cheese.
- Add egg whites, garlic, salt, essential oil, and spinach leaves. Stir to combine.
- Spoon mixture into mini muffin tins, filling to the top.
- Bake at 350 degrees for 20 minutes, or until it starts to brown. Remove from oven and let cool for 10 minutes. Run a small knife around the edges to loosen and pop out of the muffin tin and enjoy!
