These little energy bites taste ever so close to an oatmeal raisin cookie, with that perfect blend of oats, raisins, cinnamon and walnuts. But they are healthy for you and full of ingredients that will keep away your hunger while you make dinner. Also, the majority of the ingredients are staples that I have in my pantry at all times, so this is a great snack to whip up whenever I want. Total win. OATMEAL RAISIN ENERGY BITES (NO BAKE)

Ingredients
- 1 cup old fashioned oats
- ¾ cup ground walnuts (or very finely chopped)
- ½ cup ground flaxseed
- ½ cup raisins, chopped
- ½ teaspoon cinnamon
- ½ cup almond butter
- ⅓ cup honey
- 1 teaspoon vanilla
Instructions
- In a medium bowl, mix together the oats, walnuts, flaxseed, raisins and cinnamon. Add in the almond butter, honey and vanilla. Mix until well combined.
- Place the bowl in the refrigerator and let the mixture chill for 30 to 45 minutes.
- Roll the dough into balls about 1 inch in size (I used my small dough scoop). Store in an airtight container in the refrigerator for up to 1 week.
