Serves 2 – 4
Ingredients
- 4 eggs
- 2 avocados, sliced
- Shredded cheddar cheese (optional)
- Olive oil
- Salsa
Directions
- Cut avocado in half and de-pit. Next, slice off a little bit of each “back” so they lay flat. Sprinkle a dash of salt in each pit hole.
- Heat olive oil in a medium skillet, place the avocado halves inside, pitted side up. Cook on medium heat until avocado slightly browns.
- Crack an egg into each pit hole, and cover with lid. Leave on medium heat for approximately 2 minutes.
- Remove from heat and serve topped with a spoonful of favorite salsa
