2 tablespoons unsalted butter, melted and cooled slightly
1 teaspoon vanilla extract
2 small apples, peeled and cut into ¾ inch cubes
1 cup blueberries (preferably fresh, but I’ve used frozen and that works too)
Instructions
Preheat the oven to 375 degrees. Spray a 2-quart baking dish with non-stick cooking spray. Set aside.
In a small bowl, mix together the oats, ¼ cup of the walnuts, baking powder, cinnamon and salt.
In another small bowl, whisk together the maple syrup, milk, egg, butter and vanilla extract.
Place the chopped apples in the bottom of the prepared baking dish. Top with half of the blueberries. Evenly distribute the oat mixture over the fruit. Pour the liquid ingredients over the oat mixture as evenly as possible. Sprinkle with the remaining walnuts and blueberries.
Bake for 35 to 40 minutes, until golden brown and the oats have set. Let cool for about 5 minutes before serving.
