2 apples, skin intact, cored and cut into small cubes
½ cup raw walnuts, chopped (optional)
½ cup raisins (optional)
Instructions
Preheat oven to 350°F. Grease an 8-inch square ceramic baking dish or rectangle ceramic dish with coconut oil or another neutral oil.
In a medium bowl, mix together the Wet ingredients.
In a medium bowl, mix together Dry ingredients, except the apples, walnuts, and raisins. Add Wet ingredients to dry ingredients and stir until full combined.
Stir in the apples, walnuts and raisins.
Pour the mixture in the prepared baking dish and bake for 35-45 minutes until lightly brown and top is firm to the touch.
Serve immediately or cool and store in the refrigerator for up to 1 week.
Notes
- Make this on Sunday for a work week's worth of heat-and-serve breakfasts. - I like this as a snack with yogurt. - Serve with almond milk, yogurt, or kefir, and fresh fruit.
