If you’re looking for a tasty new way to get more raw greens in your diet, why not throw them into a smoothie? I love adding spinach to smoothies. It’s the perfect green for blending because it leaves no detectable vegetal taste. It also delivers a wallop of plant-based (nonheme) iron, vitamin A, C, K, folate, magnesium, calcium, as well as plant-based protein. Spinach, like most other dark leafy greens, contains lutein and zeaxanthin, carotenoids that are crucial for eye health. If you want to add kale instead of spinach to your green smoothie, just be warned that the flavour is much more pronounced.
- 2 cups loosely packed spinach
- 1 banana
- 2 juicy medjool dates, pitted (or 1 tbsp liquid sweetener of choice)
- ½ unsweetened almond milk
- 2 tbsp vegan protein powder (optional)
- 4 ice cubes
- Water or almond milk, to thin
- Ice, to thicken
- Place everything in a Blendtec or other high speed blender.
- Puree until smooth and a completely uniform green colour appears (about 30-45 seconds). Thin with water or thicken with ice, if required, and blend again until smooth.
- Serve in a chilled glass with a glass smoothie straw (if desired).
