Approximate cooking time: 20 minutes
Serves 4
Ingredients:
- 4 (6 0z) boneless, skinless chicken breasts
- 1/2 cup light lime vinaigrette
- mixed salad greens
- 1 small cantaloupe, halved, seeded, peeled and diced
- 3 tbsp fresh mint, chopped
- 1/4 cup walnuts, chopped
Directions:
- Place chicken and vinaigrette in a large bowl to marinate. Refrigerate for approximately 4 hours.
- Heat oil in a large, nonstick skillet over medium heat.
- Add chicken and cook covered for 5 to 6 minutes on each side or until browned.
- Let the chicken sit for about 5 minutes, then cut into thin strips.
- Place salad greens onto plate, top with sliced chicken, cantaloupe, mint and walnuts (optional).
- Drizzle with remaining vinaigrette if desired.
