You have complete freedom and flexibility with these cheese quesadillas. Go ahead and add any gluten free topping of your choice!
Approximate Cooking Time: 8 – 9 minutes
Ingredients
- 2 small Rudi’s Gluten Free Tortillas
- 1/2 cup shredded cheese
- 2 tablespoons tomato salsa, drained
Instructions
- Heat a large cast iron frying pan to medium high heat. Spread a small amount of oil around the bottom of the pan.
- Take two corn tortillas and place it in the pan. Flip the tortillas over a few times, 10 seconds between flips. Tortillas should begin to brown.
- Spread filling mixture over the tortilla and cover with the other tortilla; reduce heat.
- Cook for about 1 to 2 minutes, or until cheese has started to melt; flip and cook for about 1 to 2 more minutes.
- Remove and serve with salsa.
