Approximate prep time: 10 minutes
Serves 4
Ingredients:
- 1 cup carrots, shredded
- 1 cup cauliflower, diced
- 1/2 cup pecans, chopped
- 1 cup spinach or other arugula
- Oil and vinegar
- Salt and ground pepper, to taste
Directions:
- Dice cauliflower into 1/4 inch slices.
- Tear greens into small pieces.
- Toss all ingredients together with oil and vinegar. Add salt and pepper to taste and serve.
