Serves 4
Ingredients:
- 4 tbsp extra virgin olive oil
- 4 (6.0 oz) sole fillet
- 2 medium tomatoes, seeded and chopped
- 2 garlic cloves, minced
- 2 tbsp fresh parsley, chopped
- salt and pepper, to taste
Directions:
- Preheat oven to 400 degrees F.
- Brush a shallow baking dish with some olive oil.
- Place fillets in dish and season with salt and pepper to taste.
- Combine remaining olive oil with tomato and garlic in a bowl. Spoon over fillets.
- Bake about 10 minutes, or until cooked through. Serve fish sprinkled with parsley.
