Serves 4
Ingredients:
- 1 (14.5 oz) can quartered artichoke hearts, drained and chopped
- 1 large tomato, diced
- 1/4 cup fresh parsley (or basil), chopped
- 1 tbsp balsamic vinaigrette
- salt and pepper, to taste
Directions:
- In a medium bowl, combine artichoke hearts, tomato, parsley and balsamic vinaigrette. Toss gently. Salt and pepper to taste.
